We make this chicken to be used in Handrolls. It's an easy, fun weeknight meal that lends itself well to just about any combination of veggies and protein, and is perfect for repurposing leftovers.

Ingredients

2 lb chicken thighs - bone in, skin on
2 green onion, sliced
1 Tbsp honey
1 lemon, juiced
2 Tbsp Montana Mex Avocado oil
1 ½ tsp Montana Mex Jalapeño seasoning
½ tsp Montana Mex Chile seasoning
1 tsp soy sauce

Directions

Mix all ingredients but chicken in a bowl. Add the chicken to the marinade and mix until chicken is evenly coated. Ideally, marinate the chicken for 24 hours or cook right away if time is not on your side.
Grill at 400* skin side down for 20 min, flip and cook for additional 10 min and then flip onto the skin side for an additional 5 min to crisp up the skin. Halve your cooking times if using a boneless, skinless thigh meat. Remove from the girl when thickest part of the meat is at 165*f.Bien Provecho!
