Charred Pickled Red Onions
1 Red onion
1 Orange, juiced
1 Lime, juiced
A few pinches of fresh or dry Mexican oregano
1 Tbsp. fresh Cilantro, chopped
¼ - ½ tsp Montana Mex Jalapeño Seasoning
Salt & fresh cracked black pepper to taste
On a hot skillet or grill, char onions on all sides for around 10 min.
Meanwhile, add all remaining ingredients to a medium bowl or jar, stir.
Remove onion from heat and let cool, then remove excessively charred pieces and thinly slice the remaining onion in 1/4'” slices.
Add your sliced onion to the other ingredients and let sit for a minimum of 30 min. Keep refrigerated for up to 3 days.
