Ingredients

For the chimichurri:

• 2 cups chopped Italian parsley

• 4 garlic cloves, smashed and peeled

• 1/2 cup extra virgin olive oil

• 1/4 cup freshly squeezed lemon juice, from 2 lemons

• 1/2 teaspoon Montana Mex Jalapeño seasoning blend

• 1/2 teaspoon sea salt

For aioli:

• 1/2 cup mayonnaise

• 2 garlic cloves, minced

• 1 tablespoon freshly squeezed lemon juice

• 1 tablespoon chopped Italian parsley

• 1 teaspoon Montana Mex mild chile seasoning blend

• 1/4 teaspoon sea salt

• 1/8 teaspoon freshly cracked black pepper

For the potatoes:

• 3 medium russet potatoes, about 1 pound

• 2 tablespoons olive oil, plus 2 cups for frying

• 1 teaspoon sea salt, divided
