Cinnamon Pavlova with Fresh Cream and Berries

  • 4 egg whites
  • 1 cup superfine sugar
  • 1 tsp white vinegar
  • 1 tsp cinnamon
  • 1 cup heavy cream
  • 1 cup creme fraiche
  • 2 Tbsp powdered sugar
  • 1 cup fresh berries


  1. Preheat oven at 300 degrees.
  2. Place egg whites in an electric mixer and whisk on high speed until stiff peaks form.
  3. Slowly add superfine sugar, whisking for another few minutes, until stiff and glossy.
  4. Scrape down the sides and add the vinegar and cinnamon.
  5. Place in small 1 oz spoonfuls on a lined baking sheet.
  6. Bake for 40-45 minutes, or until outside is firm.
  7. Place the heavy cream, creme fraiche and powdered sugar in a clean mixing bowl and whisk until stiff peaks form.
  8. Arrange meringues on plate. Top with whipped cream and fresh berries.
