Ingredients
- 4 egg whites
- 1 cup superfine sugar
- 1 tsp white vinegar
- 1 tsp cinnamon
- 1 cup heavy cream
- 1 cup creme fraiche
- 2 Tbsp powdered sugar
- 1 cup fresh berries
Method
- Preheat oven at 300 degrees.
- Place egg whites in an electric mixer and whisk on high speed until stiff peaks form.
- Slowly add superfine sugar, whisking for another few minutes, until stiff and glossy.
- Scrape down the sides and add the vinegar and cinnamon.
- Place in small 1 oz spoonfuls on a lined baking sheet.
- Bake for 40-45 minutes, or until outside is firm.
- Place the heavy cream, creme fraiche and powdered sugar in a clean mixing bowl and whisk until stiff peaks form.
- Arrange meringues on plate. Top with whipped cream and fresh berries.
