Tailgate Style Fried Rice
2 TBSP Fish Sauce
1 TBSP Soy Sauce
1 TBSP Sesame Oil
2 TBSP Montana Mex Avocado Oil
1/2 cup Meat Snack Stick or Beef Jerky, chopped into small pieces
1/2 cup Onion or Leek, diced
1 TBSP Ginger, chopped
3 Cloves Garlic, chopped
1 cup Chopped Vegetables, such as asparagus, carrot, celery, peas, etc
1 cups Cooked Rice
1/4 - 1/2 tsp Montana Mex Jalapeño Seasoning
Salt & Pepper to taste
Combine the fish sauce, sesame oil, soy sauce and jalapeño seasoning in a small bowl or jar. This can be done ahead of time and stored in an airtight container to take camping.
Heat a Wok or other large cast iron skillet or non-stick saute pan to med/hi heat. Add the Avocado oil and coat the sides of the wok with the heated oil.
When the wok and oil is heated add the ginger, chopped snack stick or jerky, and onions. Saute for 1 minute. The mixture should be aromatic and starting to brown on the edges.
Add the vegetables and garlic. Actively mix and stir all of the cooking contents of the pan for another minute.
Stir in the cooked rice, breaking up any clumps.
Pour in sauce mixture and add Jalapeño seasoning, salt and pepper to taste. Give this all a very healthy stir so that the sauce and seasoning is evenly distributed throughout the rice.
Add any soft greens like cress, mustard greens or pea shoots. Give this all one final stir, taste and adjust seasoning to suit your preference.
