Sweet and Spicy Cod with Crispy Buckwheat Groat, Roasted Beets and Pea Shoots, and Creamy Jalapeno Onion Sauce

Creamy Jalapeno Onion Sauce

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

 

Ingredients
  • 1 white onion, thinly sliced
  • ¾ cup cream
  • 2 Tbsp butter
  • 1 tsp Montana Mex Jalapeño Seasoning
  • ½ cup water

 

Method
  1.  Melt butter in a medium saucepan until foaming. Add onion slices and cook, stirring frequently until softened, for about 20 minutes.
  2. Stir in cream and simmer for 5 minutes. Add water and Montana Mex Jalapeño Seasoning.
  3. Blend well until fine and smooth. Keep warm.

 

Crispy Buckwheat Groats with Roasted Beets and Pea Shoots

 

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

 

Ingredients
Crispy Buckwheat Groats
  • ½  cup buckwheat groats
  • 1 cup water
  • 1 Tbl Montana Mex Avocado Oil
  • 1 garlic clove, minced
  • 1 sprig fresh thyme, chopped
  • 2 sprigs fresh parsley, chopped
  • Salt to taste

 

Roasted Beets and Pea Shoots
  • 3-4 beets
  • ½ cup pea shoots
  • 2 Tbsp Montana Mex Avocado Oil
  • 1 ½ cup water

 

Method
  1. Place buckwheat groats and water in medium saucepan. Bring to a boil.
  2. Cover and simmer for 10 minutes.
  3. Warm Montana Mex Avocado Oil in a sauté pan over medium-high heat.
  4. Add buckwheat groats and saute until browned and crispy. Add minced garlic, herbs and salt to taste. Saute until garlic is browned.                                         
  5. Heat Montana Mex Avocado Oil in medium saucepan. Add quartered beets and water. Cover and cook until softened, about 20 minutes. Stir in pea shoots when beets are finished. 

 

Sweet and Spicy Cod

Serves 2
Prep Time: 5 minutes
Cook Time: 6-8 minutes
Total Time: 11-13 minutes

 

Ingredients
  • 2- 4oz cod fillets
  • ½ lemon, zested
  • 1 tsp Montana Mex Mild Chile Seasoning
  • 1 tsp Montana Mex Sweet Seasoning
  • 2 Tbsp Montan Mex Avocado Oil

 

Method
  1. Top cod fillets with lemon zest and Montana Mex Mild Chile and Sweet Seasonings on both sides.
  2. Warm Montana Mex Avocado Oil in sauté pan at medium heat.
  3. Cook for 3-4 minutes per side.
  4. Plate with crispy buckwheat and beets with creamy onion sauce.
  5. Enjoy all of your hard work!
