1 garlic clove, smashed and peeled
1/2 teaspoon sea salt
1/2 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
2 tablespoon pickle juice we will use the beet pickle juice
1 tablespoon chopped chives
1/4 teaspoon chile powder
Place the garlic on a board and season with the salt. Using the side of knife, work the garlic clove into a paste.
Place the garlic paste into a jar with an airtight lid and add the mayonnaise, lemon juice, pickle juice, chives and chile powder.
Shake well until the mixture is smooth and everything is combined. Serve drizzled over root vegetable hash.
