Oh yeah! Pesto is perfect for any summertime dish that goes great with pasta, pizza, bread, or anything else you can spread this deliciousness on! We put it on our Rigatoni - "A La Montana Mex," but let us know on Instagram (@MontanaMex) what you're using our pesto on!
Makes ~1 cup
- 1 cup packed Basil leaves
- ¼ cup Parmesan pieces
- 1/8 cup Toasted Pine Nuts
- 2 cloves Garlic
- ½ cup Montana Mex, extra virgin Avocado Oil
- 3 Tablespoons Water
- Salt & Black pepper to taste
- Place all ingredients into a small food processor or blender, blend on high speed for a minute until desired consistency is reached.
- Check taste and add salt and pepper as needed.
Remember you can always add salt but you can’t take it out!
