Montana Mex Pesto

Oh yeah! Pesto is perfect for any summertime dish that goes great with pasta, pizza, bread, or anything else you can spread this deliciousness on! We put it on our Rigatoni - "A La Montana Mex," but let us know on Instagram (@MontanaMex) what you're using our pesto on!

 

Makes  ~1 cup

Ingredients 
  • 1 cup packed Basil leaves
  • ¼ cup Parmesan pieces
  • 1/8  cup Toasted Pine Nuts
  • 2 cloves Garlic
  • ½ cup Montana Mex, extra virgin Avocado Oil
  • 3 Tablespoons Water
  • Salt & Black pepper to taste

 

Method
  1. Place all ingredients into a small food processor or blender, blend on high speed for a minute until desired consistency is reached.                         
  2. Check taste and add salt and pepper as needed.
  3. Enjoy! 

Remember you can always add salt but you can’t take it out!
